The Biscuit That Brought My Taste Back (and My Soul With It)

The Bojangle's Cajun Filet Biscuit (with Pimento Cheese) isn't perfect or "aesthetic" and it doesn't come with bottomless mimosas.. It's not curated. It's not trendy. But one 2021 morning in December in Alabama in a drive-thru with my Daddy behind the wheel this food writer was given a taste of hope again. This biscuit changed everything. Three skull fractures. A brain bleed. 5 days in a Florida hospital spent mostly alone, with a mask on. I realized mid way through my solo stay my smell and taste were completely gone. After 8 weeks of hell and being banished from the house my Mother is buried behind, I got my taste back. This wasn't breakfast -- it was proof of life. Would I recommend it to a snobby food writer? Nope. But would I recommened it to someone crawling back into their body after deep loss? Every damn day. Beacuase sometimes resurrection doesn't look lik Sunday service. It looks like pimento cheese slathered on a Cajun filet biscuit at 9am in your Daddy's car in your hometown. When no one else showed up but my Daddy and Bonus Mama -- God showed up in a biscuit.
